Pumpkin Waffles

Having grown up in the Philippines, I am new to all pumpkin desserts...and now I am in love with all pumpkin sweets. My friend Angie swears by pumpkin waffles. It has always sounded great to me and have been wanting to try them for a while now. I found this recipe on Recipezaar and decided to give it a go.

As I was cracking the eggs for the batter I found a little surprise....twin yolks :D !!!! lol. These have always excited me for some reason. I suppose it goes back to being a little girl, getting a twin-yolked fried egg was very exciting and special.



The batter seemed fine, but as it cooked it kept on sticking to my waffle iron. And as I ate it, it was very soft and mushy in the center. I wonder if maybe i need to get a newer tin of baking powder (the one i have is almost 2 years old)? Or maybe the recipe just needs more flour? Grrrr. I'm not giving up yet though, I will come up with the best pumpkin waffles even if i have to tweak this recipe to hell :D.




Spiced Pumpkin Waffles

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon ground ginger

1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar

1 cup canned pumpkin puree

1 2/3 cups milk

4 tablespoons butter, melted and cooled

  1. Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  2. In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  3. Gently fold in the flour mixture.
  4. Cook according to your waffle iron directions. They come out a nice deep, golden brown.
    These are great with a little bit of syrup, but would also be great with honey butter
