Vegan Moussaka

My cousin Jo bought me the Veganomicon cookbook when she came over for a visit. The vegan moussaka recipe immediately jumped out at me. I love moussaka although i haven't had it in years, the thought of all that oily saturated fat just turns me off. I have to say though that this vegan version just blew me away.


It's made by layering potatoes, grilled eggplant and zucchini with a nutmeg-y tomato sauce, and its topped with a garlic pine nut soy bechamel. It's delicious!!!!!!!! I divided it up into 4 small portions which i put in my freezer, and on those nights i'm too exhausted to make dinner I'll just pop one in the oven.
